Ingredients
• 1 lb ground turkey
• 1 cup onion, diced
• 1 red pepper, diced
• 2 garlic cloves, minced
• 2 jalepeno peppers, seeded, minced
• 1 Tbsp chili powder
• 1 ½ tsp ground cumin
• 1 ½ tsp ground coriander
• ½ Tbsp dried oregano
• ½ tsp dried marjoram
• ¼ tsp red pepper flakes
• ¼ tsp ground cinnamon
• 16 oz can of low sodium, diced tomatoes (or whole tomatoes chopped)
• 16 oz can of black beans, drained and rinsed
• ¼ cup fresh cilantro (optional)
Directions
1. Add first 12 ingredients (Turkey up to Cinnamon) in a large sauce pan. Cook mixture over medium heat, stirring occasionally, until turkey no longer has any pink and onions are translucent.
2. Stir in tomatoes and bring to a boil.
3. Reduce heat and simmer uncovered for 30 minutes.
4. Stir in beans and cilantro. Continue to simmer for another 15 minutes.
